I just got a old eMac computer and I want to put a open source operating system, which is the best and most compatible to a PowerPC eMac.

    I would have said "Ubuntu" but I think that they have recently stopped supporting PowerPC. I put Debian on my iBook G4 (PowerPC) a little while ago and it works great. Everything is working (power save features, wireless card, etc.). For a desktop it should be even easier.

    As you may know Ubuntu is based off Debian and so many things will "feel" very similar. You can use "apt-get install <package>" to get new software with a minimum of fuss. My recommendation would be to get the "testing" or "stable" (both are actually pretty stable, testing will just have newer software) version of Debian via bittorrent:
